Peanut Butter Banana Muffins
Ingredients
1 1/2 tablespoons butter, melted
1/3 cup white sugar
1/3 cup peanut butter
1 egg, lightly beaten
1 large, ripe banana, mashed
1 1/2 tablespoons milk
1 cup all-purpose flour ( I used wheat flour)
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 dash salt
1/2 cup raisins
1/4 cup chopped roasted peanuts
** I also added 1T of flax seeds and left out the peanuts, and sprinkled a little brown sugar on top.
Directions:
Preheat oven to 350 degrees F (175 degrees C). Grease a 5x9 inch loaf pan or 12 muffin tin
In a large bowl, cream together the butter, sugar, peanut butter, egg, banana, and milk. In a separate bowl, mix the flour, baking powder, baking soda, and salt. Stir the flour mixture into the butter mixture just until moistened. Fold in the raisins and peanuts. Transfer to the prepared pan.
Bake 45 minutes in the preheated oven for the loaf or 20 minutes for the muffins, or until a knife inserted in the center of the loaf comes out clean. Cool in pan for 10 minutes before serving.
